Ingredients

  1. 1 Porterhouse steak (at least 1.5 inches thick, 600–800g)

  2. 1 tablespoon olive oil

  3. 1½ teaspoons coarse salt

  4. 1 teaspoon freshly ground black pepper

  5. 2 cloves garlic (smashed)

  6. 2 sprigs rosemary or thyme

  7. 2 tablespoons unsalted butter (for basting)


Instructions

  1. Prep the Steak: Remove steak from the fridge 45 minutes before cooking and let it come to room temperature.

  2. Season Generously: Coat both sides of the steak with olive oil, then season with salt and pepper.

  3. Sear the Steak: Heat a cast iron skillet over high heat. When hot, sear the steak for 3–4 minutes on each side.

  4. Add Flavor: Add butter, garlic, and rosemary to the pan. Baste the steak by spooning the butter over the meat for 1–2 minutes.

  5. Finish in Oven: Transfer the skillet to a preheated oven at 200°C (400°F) and roast for 5–8 minutes, depending on thickness and desired doneness.

  6. Rest Before Slicing: Let the steak rest for 10 minutes on a cutting board to allow juices to redistribute.

  7. Slice & Serve: Cut along the bone to separate the filet and strip portions, then slice and serve.
