🛒 Ingredients (Serves 4)

  1. 1.5 lbs (700g) beef round steak, cut into serving portions

  2. 2 tablespoons olive oil

  3. 1 large onion, thinly sliced

  4. 2 garlic cloves, minced

  5. 1 tablespoon tomato paste

  6. 1 cup beef broth

  7. ½ cup dry red wine (or substitute with additional beef broth)

  8. 1 teaspoon dried thyme

  9. 1 bay leaf

  10. Salt and pepper to taste

  11. Fresh parsley, chopped for garnish


🍳 Instructions

1. Season the beef

Generously season the round steak pieces with salt and pepper on both sides.

2. Sear the steak

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear each steak piece for about 3 to 4 minutes per side until browned. Once done, remove them from the pan and set aside.

3. Sauté the onions and garlic

In the same pan, add the sliced onions and cook for about 5 minutes, stirring often, until they become soft and slightly golden. Stir in the minced garlic and tomato paste and cook for another 1 minute.

4. Deglaze the pan

5. Add broth and herbs

Pour in the beef broth. Add the thyme and bay leaf. Return the seared steak pieces to the pan, ensuring they are partially submerged in the liquid.

6. Braise the steak

Reduce the heat to low, cover the pan with a lid, and simmer gently for 1.5 to 2 hours. Flip the steak once during cooking and check occasionally to ensure there’s enough liquid.

7. Finish and serve

Once the steak is fork-tender, remove the bay leaf and adjust seasoning with salt and pepper. Garnish with chopped parsley. Serve hot with mashed potatoes, buttered noodles, or crusty bread.
