Tender Braised Beef Brisket

(Bœuf de Poitrine Braisé)

 Ingredients (Serves 6-8)

  1. 5–6 lbs (2.2–2.7 kg) beef brisket, trimmed

  2. 2 tablespoons olive oil

  3. 1 large onion, chopped

  4. 4 garlic cloves, minced

  5. 2 cups beef broth

  6. 1 cup dry red wine

  7. 2 tablespoons tomato paste

  8. 1 tablespoon brown sugar

  9. 1 teaspoon smoked paprika

  10. 1 teaspoon dried thyme

  11. 1 bay leaf

  12. Salt and freshly cracked black pepper to taste

🍳 Instructions

1. Preheat the oven

Preheat your oven to 325°F (163°C).

2. Season the brisket

Generously season the brisket on all sides with salt, pepper, and smoked paprika.

3. Sear the brisket

In a large, heavy-bottomed Dutch oven, heat olive oil over medium-high heat. Sear the brisket for 4–5 minutes per side until it is browned on all sides. Remove the brisket and set it aside.

4. Sauté onions and garlic

In the same pot, add the chopped onion and cook for about 5 minutes, until softened. Add the garlic and cook for another 1–2 minutes until fragrant.

5. Deglaze the pot

Stir in the tomato paste, then add the red wine and beef broth. Use a wooden spoon to scrape up any browned bits from the bottom of the pot. Stir in the brown sugar, thyme, and bay leaf.

6. Braise the brisket

Return the brisket to the pot, fat side up. Cover the pot with a tight-fitting lid and place it in the oven. Let it cook for 3–4 hours, or until the brisket is tender and easily shredded with a fork. If the liquid level gets too low, add a bit more beef broth.

7. Rest and slice

Once the brisket is tender, remove it from the oven. Let the brisket rest for 10–15 minutes before slicing against the grain.

8. Serve

Serve with mashed potatoes, roasted vegetables, or a fresh salad.

💡 Cooking Tips

1. Low and Slow: The key to tender brisket is slow cooking. Don’t rush the process.

2. Make Ahead: This dish can be prepared a day ahead. The flavor develops even more after resting in the fridge overnight.

3. Slicing Tip: Always slice brisket against the grain to ensure each bite is tender.
