Penne with Creamy Spinach Sauce (Penne con Salsa Cremosa agli Spinaci)

A healthy and satisfying Italian pasta dish with tender penne tossed in a luscious spinach cream sauce — simple, wholesome, and full of flavor.

 Ingredients

  1. 400g penne pasta

  2. Salted water for boiling

For the spinach cream sauce:

3. 200g fresh spinach leaves

4. 200ml heavy cream

5. 2 tbsp olive oil or butter

6. 2 garlic cloves, minced

7. 1 small onion, finely chopped

8. 50g Parmesan cheese, grated

9. Salt and pepper to taste

10. Nutmeg (optional, a pinch)

11. Fresh basil or parsley for garnish (optional)


👨‍🍳 Instructions

  1. Cook the pasta:

    Boil the penne in salted water until al dente. Drain and set aside, reserving a little pasta water.

  2. Sauté the aromatics:

    In a large skillet, heat olive oil or butter. Add chopped onion and garlic and sauté until soft and fragrant.

  3. Cook the spinach:

    Add the spinach and cook until wilted. Let it cool slightly, then blend into a smooth purée (optional for a creamy texture).

  4. Make the sauce:

    Return the spinach (or purée) to the pan. Stir in the cream and Parmesan. Let it simmer until thickened. Season with salt, pepper, and a pinch of nutmeg if using.

  5. Combine with pasta:

    Toss the penne into the sauce and stir well to coat. Add a splash of pasta water if needed for consistency.

  6. Serve:

    Garnish with more Parmesan and fresh herbs. Serve hot.
