  • 300g penne pasta

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 1/2 tsp red chili flakes (optional)

  • 1/4 cup vodka

  • 1 cup tomato puree (or crushed tomatoes)

  • 1/2 cup heavy cream

  • Salt and black pepper, to taste

  • 1/4 cup Parmesan cheese, grated

  • Fresh basil or parsley, for garnish

👩‍🍳 Instructions

1. Cook the Penne:

Boil penne in salted water until al dente. Reserve 1/4 cup pasta water, then drain and set aside.

2. Sauté Aromatics:

In a large pan, heat olive oil and butter over medium heat. Add chopped onion and cook until translucent (3–4 minutes). Add garlic and chili flakes; cook for 30 seconds.

3. Add Vodka & Simmer:

Pour in vodka and let it simmer for 2–3 minutes to cook off the alcohol.

4. Make the Sauce:

Add tomato puree. Stir and simmer for 8–10 minutes until thick. Reduce heat and mix in the cream until the sauce becomes rich and orange-pink.

5. Combine & Finish:

Add cooked penne to the sauce. Toss to coat, adding reserved pasta water if needed. Stir in Parmesan. Season with salt and pepper to taste.

6. Serve:

Garnish with fresh basil or parsley and extra Parmesan. Serve hot.
