Pasta with Artichoke Hearts

(Pasta ai Carciofi)

Pasta with Artichoke Hearts is a simple and elegant Italian dish made with tender artichokes, garlic, white wine, and olive oil. Light, flavorful, and perfect for spring or anytime you want a Mediterranean-inspired meal.


🧺 Ingredients:

  1. 250g (9 oz) pasta of choice (spaghetti, penne, or rigatoni)

  2. 2 tablespoons extra virgin olive oil

  3. 2 garlic cloves, thinly sliced

  4. 1 can (400g) artichoke hearts, drained and quartered

  5. ¼ cup dry white wine (optional)

  6. Salt and freshly ground black pepper to taste

  7. Zest and juice of half a lemon

  8. Fresh parsley or basil, chopped

  9. Optional: grated Parmesan cheese for serving

  10. Optional: pinch of red pepper flakes for heat

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the package instructions. Reserve ½ cup of pasta water before draining.

  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for 30 seconds until aromatic but not browned.

  3. Add the artichoke hearts to the skillet and cook for 5 minutes, allowing them to warm through and lightly brown at the edges.

  4. If using, pour in the white wine and let it simmer for 2 to 3 minutes until slightly reduced.

  5. Stir in the lemon zest and juice, then season with salt, pepper, and red pepper flakes if desired.

  6. Add the cooked pasta to the skillet and toss to combine with the artichokes and pan sauce. Add a splash of reserved pasta water if the dish feels dry.

  7. Garnish with chopped parsley or basil. Serve warm with a sprinkle of Parmesan cheese if desired.

  1. Marinated or frozen artichoke hearts work great if canned are unavailable.

  2. Add baby spinach or sun-dried tomatoes for extra flavor.
