For the Salad:

  1. 2 boneless, skinless chicken breasts

  2. 2 cups cherry tomatoes (halved)

  3. 1 cup fresh mozzarella balls (bocconcini or ciliegine)

  4. 2 cups mixed greens or baby spinach (optional base)

  5. Fresh basil leaves (a handful)

  6. 1 tbsp olive oil (for cooking chicken)

  7. Salt and black pepper to taste

  8. Optional: Avocado slices or toasted pine nuts for extra richness

For the Balsamic Dressing:

  1. 3 tbsp extra virgin olive oil

  2. 1 tbsp balsamic vinegar

  3. 1 tsp Dijon mustard (optional, for a creamy texture)

Step 1: Cook the Chicken
