This Grilled Salmon with Tomato Basil Relish is a light and flavorful Italian dish, combining smoky grilled salmon with a refreshing medley of cherry tomatoes, fresh basil, garlic, and olive oil. A perfect summer recipe that’s easy, healthy, and bursting with Mediterranean flair.


Ingredients (Serves 2)

For the salmon, prepare two fillets, each around 6 ounces. Season with half a teaspoon of sea salt, a pinch of freshly ground black pepper, and one tablespoon of extra virgin olive oil. For the tomato basil relish, use one cup of halved cherry tomatoes, one tablespoon of finely chopped red onion, one garlic clove minced, a handful of fresh basil leaves thinly sliced, one tablespoon of extra virgin olive oil, one teaspoon of balsamic vinegar, and a pinch of salt and pepper to taste.


Instructions

Begin by seasoning the salmon fillets with salt and pepper and brushing them with olive oil. Set aside while you prepare the relish.

In a medium bowl, combine the cherry tomatoes, red onion, garlic, basil, olive oil, and balsamic vinegar. Season with salt and pepper, then mix gently and let the flavors marinate at room temperature for 15 to 20 minutes.
