Grilled Salmon with Limoncello Glaze

(Salmone alla Griglia con Glassa al Limoncello)

Grilled Salmon with Limoncello Glaze is a unique and elegant Italian dish where the brightness of lemon meets the sweetness of Limoncello in a silky glaze. This recipe delivers a perfect balance of smoky, tangy, and sweet flavors ideal for summer entertaining or gourmet weeknight meals.

Ingredients (Serves 2)

Start with two salmon fillets, around 6 ounces each. Season with half a teaspoon of sea salt, a pinch of black pepper, and one tablespoon of extra virgin olive oil. For the Limoncello glaze, you’ll need a quarter cup of Limoncello liqueur, two tablespoons of freshly squeezed lemon juice, one tablespoon of honey, one teaspoon of lemon zest, and a pinch of sea salt. Optional additions include a sprig of thyme or rosemary for infusion.

Instructions

Begin by seasoning the salmon fillets with salt and pepper and brushing them with olive oil. Allow them to rest at room temperature while preparing the glaze.

In a small saucepan, combine the Limoncello, lemon juice, honey, lemon zest, and a pinch of salt. Place the pan over medium heat and bring the mixture to a simmer. Reduce the heat slightly and cook for 6 to 8 minutes, stirring occasionally, until the liquid reduces to a syrupy glaze. If using, add a sprig of thyme or rosemary during the simmering process for herbal aroma. Remove from heat and discard the herb.

Preheat your grill or grill pan over medium-high heat and lightly oil the grates. Place the salmon skin-side down and grill for 4 to 5 minutes per side, or until the salmon is opaque and flakes easily with a fork.

Transfer the grilled salmon to plates and brush or drizzle generously with the warm Limoncello glaze. Serve immediately with lemon couscous, sautéed greens, or grilled vegetables.

Cooking Tips

To avoid burning the glaze, apply it after grilling — not during. For a richer glaze, simmer the Limoncello with a pat of butter at the end. Choose a high-quality Italian Limoncello for the best flavor and aroma. This dish pairs beautifully with a chilled glass of Prosecco or a dry white wine like Vermentino.
