A flavorful and aromatic grilled mackerel recipe with fennel, lemon, and herbs. An Italian coastal classic rich in omega-3 and perfect for healthy eating.

Ingredients:

2 whole mackerel, cleaned and gutted

1 small fennel bulb, thinly sliced

2 tablespoons extra virgin olive oil

Juice of 1 lemon

1 teaspoon fennel seeds, lightly crushed

1 clove garlic, minced

1 tablespoon chopped fresh parsley

Salt and freshly ground black pepper

Lemon wedges for serving

Instructions:

  1. Preheat the grill to medium-high heat and clean the grates well.

  2. In a bowl, combine olive oil, lemon juice, garlic, crushed fennel seeds, salt, and pepper.

  3. Rub the marinade all over the mackerel, inside and out.

  4. Stuff the cavity with sliced fennel and parsley.

  5. Grill the mackerel for about 4 to 5 minutes per side, or until the skin is crisp and the flesh flakes easily.

  6. Remove from grill, rest briefly, then serve hot with lemon wedges and a sprinkle of fresh herbs.
