
Grilled Mackerel with Fennel (Sgombro alla Griglia con Finocchio)

Ingredients:
2 whole mackerel, cleaned and gutted
1 small fennel bulb, thinly sliced
2 tablespoons extra virgin olive oil
Juice of 1 lemon
1 teaspoon fennel seeds, lightly crushed
1 clove garlic, minced
1 tablespoon chopped fresh parsley
Salt and freshly ground black pepper
Lemon wedges for serving
Instructions:

Preheat the grill to medium-high heat and clean the grates well.

In a bowl, combine olive oil, lemon juice, garlic, crushed fennel seeds, salt, and pepper.

Rub the marinade all over the mackerel, inside and out.

Stuff the cavity with sliced fennel and parsley.
