
Grilled Branzino with Lemon and Herbs (Branzino alla Griglia)
A simple yet elegant Mediterranean grilled whole branzino infused with lemon, garlic, and fresh herbs. Perfect for summer dinners or al fresco entertaining.
Ingredients:
1 whole branzino (about 500–700g), cleaned and scaled
2 tablespoons extra virgin olive oil
1 lemon, thinly sliced
3 garlic cloves, smashed
4 sprigs fresh rosemary or thyme
Salt and freshly ground black pepper
1 tablespoon chopped parsley (for garnish)
Lemon wedges for serving
Instructions:

Preheat your grill to medium-high heat and oil the grates to prevent sticking.

Pat the branzino dry with paper towels and make 2–3 diagonal slits on each side of the fish.

Season the inside and outside of the fish generously with salt and pepper.

Stuff the cavity of the branzino with lemon slices, smashed garlic, and fresh herbs.

Rub the outside of the fish with olive oil to help crisp the skin.

Place the fish on the grill and cook for 5–6 minutes on one side, until the skin is crisp and the fish lifts easily.

Flip the fish carefully and grill for another 5–6 minutes until the flesh is opaque and flakes easily.

Remove from the grill, rest for a few minutes, then garnish with chopped parsley and a squeeze of lemon juice.

Serve hot with lemon wedges on the side.
Pro Cooking Tip:
Use a fish grilling basket or lightly oil a sheet of foil under the fish if you’re worried about sticking or flipping.
