Grilled Cowboy Ribeye Steak

1 cowboy ribeye steak (bone-in, 2–2.5 lbs or about 1 kg, 2 inches thick)

Optional: 1 tablespoon butter, 1 crushed garlic clove, 1 sprig rosemary (for basting)
🍳 Instructions
1. Prepare the steak
Let the cowboy steak rest at room temperature for 45–60 minutes before cooking. Pat it dry with paper towels. Rub with olive oil, then season all over with salt and pepper.
2. Preheat the grill or pan
Preheat your grill to high heat (450–500°F / 230–260°C), or heat a heavy cast-iron skillet over high heat if cooking indoors.
3. Sear the steak
Place the steak on the grill or in the pan. Sear for about 4–5 minutes per side until a nice crust forms. Use tongs to sear the edges as well.
4. Finish cooking
Move the steak to indirect heat (or reduce heat to medium if using a pan) and cook to your desired doneness. For medium-rare, aim for an internal temperature of 130°F (54°C). This may take another 10–15 minutes depending on thickness.
5. Optional basting step
During the final 2–3 minutes of cooking, add butter, crushed garlic, and rosemary to the pan or grill-safe dish. Baste the steak for extra richness.
6. Rest the steak
Remove the steak from heat and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
7. Slice and serve
Slice the steak against the grain and serve with your favorite sides like roasted potatoes, grilled vegetables, or a chimichurri sauce.

1. Use a meat thermometer to avoid overcooking — cowboy steaks are thick and benefit from precise temps.
2. Reverse searing (slow roasting then finishing with a hot sear) also works beautifully with this cut.
3. Cowboy steak is perfect for sharing — serve it sliced on a wooden board for a rustic presentation.
