  5. Optional: 1 tablespoon butter, 1 crushed garlic clove, 1 sprig rosemary (for basting)

1. Prepare the steak

Let the cowboy steak rest at room temperature for 45–60 minutes before cooking. Pat it dry with paper towels. Rub with olive oil, then season all over with salt and pepper.

2. Preheat the grill or pan

Preheat your grill to high heat (450–500°F / 230–260°C), or heat a heavy cast-iron skillet over high heat if cooking indoors.

3. Sear the steak
