Grilled Sardines Calabrian Style (Sardine alla Calabrese)

Ingredients:
500g fresh sardines, cleaned and gutted
2 tablespoons extra virgin olive oil
2 cloves garlic, finely chopped
Juice and zest of 1 lemon
1 teaspoon Calabrian chili flakes or fresh chopped chili
1 tablespoon fresh oregano or parsley, chopped
Salt and freshly ground black pepper
Lemon wedges for serving
Instructions:

In a bowl, mix olive oil, lemon juice and zest, garlic, chili flakes, herbs, salt, and pepper.

Coat the sardines in the marinade and let sit for 15 to 20 minutes.

Preheat grill or grill pan over medium heat and oil the surface lightly.

Grill sardines for 2 to 3 minutes per side until skin is crisp and lightly charred.
