Salmon Bruschetta combines the rustic charm of Italian antipasti with the richness of salmon, topped with a fresh tomato, basil, and garlic mixture on grilled bread. This light, flavorful dish is perfect for summer gatherings, brunch, or a creative twist on classic bruschetta.
Ingredients (Serves 2)
Use two salmon fillets, about 5 to 6 ounces each. Season with half a teaspoon of sea salt, a pinch of black pepper, and one tablespoon of extra virgin olive oil. For the bruschetta topping, prepare one cup of diced ripe tomatoes, one garlic clove finely minced, one tablespoon of extra virgin olive oil, a handful of fresh basil leaves sliced into ribbons, and a pinch of sea salt. For the base, use four slices of crusty Italian bread, lightly brushed with olive oil.
Instructions
Begin by seasoning the salmon fillets with salt and pepper and brushing them with olive oil. Set aside while preparing the bruschetta topping.
In a bowl, combine the diced tomatoes, minced garlic, basil, and olive oil. Season with salt and stir gently. Let the mixture rest for at least 15 minutes to allow the flavors to blend.
Preheat your grill or grill pan over medium-high heat. Lightly oil the grates. Grill the salmon skin-side down for 4 to 5 minutes per side, or until the fillets are opaque and flake easily with a fork. At the same time, grill the bread slices for 1 to 2 minutes per side, just until they develop grill marks and a light crisp.
Transfer the grilled bread to serving plates. Flake the grilled salmon into large chunks and layer them over the bread slices. Spoon the fresh tomato-basil mixture on top of each bruschetta and serve immediately. Optionally garnish with extra basil or a drizzle of balsamic glaze.
Cooking Tips
